The recipe looks like a long tedious one, but trust me it isn’t. Its actually a lot of fun to make this cake. And what better rewards than an earshot grin of satisfaction from your better half!
It used to look like a very tedious job, whenever I have seen my mom or nani make shrikhand. I honestly have no idea why they chose to make their lives so difficult by getting chakka / चक्का and then grinding it for hours to pass it through the special machine, and then making the rest of the dessert. I really think I should find out why!
It is so so much easier when you make fresh chakka / चक्का at home itself, and avoid wasting time with the special machine. This is one of the simplest and tastiest Indian desserts. Beautifully creamy and rich, with amazing combinations of flavors ; cardamom, saffron, mango, mango pulp, dry fruits etc. First of all, till now, I always thought it was called rabDi, but weirdly in english it is spelled as rabRi and in hindi as rabDi.
hmm... what do I say about this delight! The phrase ‘’‘hard work pays off’’ DEFINITELY applies here! It is a slightly tedious process and needs constant attention, but the end result is absolutely worth all the sweating and stirring! If you want an instant sugar – high and a complete satisfaction of feasting on ‘’comfort food’’, to get through your day , this is the dish you are looking for! An absolutely delicious, sweet, caramelized, slightly chunky, almost condensed milk, makes it a fantastic dessert, or even a sugar-powered breakfast. Rabri is the main ingredient in several desserts, such as rasaballi, chhena kheeri, and kheersagar. Rabri can also be made savoury with salt, masala, and jeera. Out of the blue, I remembered this delicious Maharashtrian dessert after over 15 years!
This is specially made for Diwali. Anything and everything about Diwali gets me super charged to make those 'special snacks / faral''. I remember my grammy making these in massive quantities to send them to the whole family. And if, by any chance we were vacationing at her house then, we were definitely the youngest and the cheapest labour available, with the best incentives; hogging on freshly fried, lip smacking delicious and crunchy Chirotes. It is a beautiful, delicate, layered, crispy fried pastry, either dipped in sugar syrup or dusted with powdered sugar. One of the must-haves for a Diwali celebration. My adventure of trying different and interesting dishes, got me to relish this one. About 4 - 5 years back on one of my Manila flights, I happened to taste the 'Tapioca Mango' Pudding, and what a beautiful blend of tastes that I still remembered it! And as I got the most delicious alphonso mangoes recently, I had to try my hand at this. We don't get tapioca pearls in the middle-east easily, the best and the closest substitute to it is sago pearls. A simple, quick and wonderful tropical dessert with a perfect blend of tropical fruits and the thick vanilla sago pudding, can be served warm or chilled. This was one of the very first recipes that I tried out before starting the blog, and trust me, I have made it about 20 times since. It is such a hot favorite at home and at Mitul's office, that every week I have to make sure that I have enough over ripe bananas to quickly fix a banana bread if the emergency request comes in!

Some people like de-stressing with listening to music, or jogging or anything else, but for me, the best de-stressing method is baking. The process of making and the smell of baking are absolutely heavenly and therapeutic! One of my favourite de-stressing options! DIWALI SPECIAL!!
Just writing that has made me so happy and hyper that I can't wait for Laxmi Pujan day to invite all our friends for feasting on the faraal (Diwali snacks). This one is one of my all time favourites! It tastes similar to a short crust biscuit, but in fact had a much much better caramelized and crunchy taste. A delicious quick recipe, with a gorgeous blend of vanilla and orange. Makes a great snack for the kids too. When it comes to baking, you need to follow the mantra mentioned below- Baking a cake is nothing to fear of. Do not be over careful or overzealous. As long as you do exactly as the recipe states, it will turn out JUST fine. And even if it doesn't, the best part about baking is that it makes you think later of what you might have done wrong. And the more you give it a thought the more you want to try your hand at baking different things, thus increasing your expertise. So all in all, enjoy the process without worrying about the end result and it should and would turn out as it is supposed to be! Happy Baking! I guess my guilt and then sincerity took over me for this one.
I remember, during our 3rd or 4th semester in college, we used to have bakery practicals and I had missed out on making this recipe. Somehow, while surfing through our food production journals the other day, I remember blindly copying this down for submission, but not making it. So what better reason than that to make up for lost credit in the practicals! And this time I can prove it with a picture that I did make the cake and follow the recipe to the T! Even though the recipe says no fat/oil/butter/margarine, but the number of eggs definitely make up for the calorie balance! So even if you try making this, be careful with how much you eat in a day. Inspire of no fat added, this turned out to be an amazingly soft and moist cake. Just for the adventure of it, a definite must-try. One of my most favourite and very eagerly awaited festivals. This is a 10 day festival that celebrates the birth of Ganpati (the Indian God with an elephant head). It usually falls at the end of the monsoon season and is celebrated in much grandeur all over India. Various localities build different themed pendals which are elaborately decorated, and absolutely everyone participates, from the youngest to the oldest, bringing together people from all walks of life, for once, putting their religions aside. Anything with a combination of basundi does taste the best! I always thought that this is a slightly complicated recipe, but it's more interesting, than complicated. Hope you enjoy making it as much as I did. After cooking, according to Mitul's ''interesting dishes'' demands all week, weekend is the time, where I get pampered.
One of the weekend day's breakfast menu is decided and made by Mitul! This is one of his creations and he is very good at it! What an amazing way to get pampered! Pancakes, with fruits and maple syrup finished with a freshly brewed pot of coffee! Couldn't get any better than this.
