At times I really feel like m living with a lil monkey! The signs of terrible twos and the rebellious behavior with it have already started showing. :) Peeled bananas, half eaten bananas, or lets-see-what-happens-when-I squash-a-banana, are all the possible types of bananas found in our house right now.

From absolutely disliking chocolates, to making something out of them at least once a week, Ariana has definitely shared her love of bittersweet heavenliness with me. She doesn’t yet like eating nutella right out of the jar, that’s why i had to look for recipes that would suit her taste and make a good enough and a healthy snack for her. This weekend, it was our anniversary :) Half a decade of married bliss! And what better reason to celebrate it with a beautiful, simple, quick chocolate cake, with a beautifully rich Ganache.
I did take pictures of the cake without any other accessories as we were going to have friends over that evening. But for the two loves of my life I had to make it more special with cute little fondant toppers. See the end of the recipe to find out what they were and why :) I have always loved the recipes that Stephany from Joy Of Baking makes, they are awesomely simple and quick too. And since I am always with an eye on the clock, it couldn't have gotten better than this. The beauty of this sauce is that it has the most simple and the least ingredients and yet is one of the most delicious sauces I have tasted. To even remember the taste and flavors in it after almost 14 years, definitely makes it special. A few years back, while studying in Japan, our cafeteria used to have a 'veggie spa' (veg spaghetti). I remember surviving on it for the whole time that I was there. So simple and such beautiful flavors! I would always try and peek into the open kitchen to try and see what all ingredients they would add, or ask my friends who would be working part time there, but it was supposed to be a TOP secret! A few months back, I had this insane craving for this 'spa' and had to had to try recreating it. And to my surprise, I am ALMOST close to the same taste that the cafeteria would serve! What joy! Definitely a must try. Absolutely delicious, super simple and quick! I have been told that the palak paneer I make is one of the best :) My husband and my sister in law would never ever touch spinach, because they would always complain that it tastes of henna / mehendi. Now that’s a difficult taste to tone down or get rid of in any dish. But spinach is such a beautiful veg that I would do anything to change its taste a little and make nice meals out of it which everyone could relish. Be it any occasion, if you are celebrating, if you are feeling sick, or if you need some comfort food, spinach can be made into any of those dishes, and that too in very little time! This is one of my all time favorite dishes, and goes superbly well with freshly baked rotis and a lovely salad of onions – cucumbers – tomatoes.
