I so wanted to eat pasta today, but didn't have any pasta sauce at home. So thought of having a healthier and a less filling option.
The best part I love about this salad is the combination of pasta, cucumber and tomatoes. A perfect blend of carbs and fibre to make it an awesome meal.

INGREDIENTS Spaghetti Tomatoes Cucumbers Parmesan Cheese Flakes Olives | QUANTITY 125 gms 1 large 2 large optional optional |
RECIPE
Boil water in a large pan with some salt and oil. Add the spaghetti, and cook for the time mentioned on the package. Drain and rinse under cold water (to stop them from overcooking).
Cut the large tomato into 6 - 8 wedges, and separate the pulp from the flesh.
Peel the cucumber and cut it into thin slices using a peeler.
Once the spaghetti is cooled, add the tomato wedges, tomato pulp, cucumber slices and the olive oil.
Toss well, season, and serve garnished with parmesan cheese flakes.
Tastes best with Mint-Garlic Vinaigrette.
