Fresh salads with a mix of fresh fruits definitely make it very refreshing.
This is one of my favorite salads as it has a perfect blend of crunchy salad leaves, sweet n sour orange chunks, enough of carbohydrates by the beans, nice creamy taste of the feta cheese and a perfect tangy orange oregano dressing!
Feta Cheese is traditionally made in Greece. It is a crumbly aged cheese, commonly produced in blocks, and has a slightly grainy texture with a very rich creamy taste.
It is used as a table cheese, as well as in salads (e.g. the Greek salad), pastries and in baking, notably in the popular phyllo-based dishes ("spinach pie / cheese pie"), or served with some olive oil or olives and sprinkled with aromatic herbs such as oregano. It can also be served cooked or grilled, as part of a sandwich, in omelets, or as a salty alternative to other cheeses in a variety of dishes.

INGREDIENTS Lettuce Leaves Radish Kidney Beans Orange Spring Onion Feta Cheese Orange Zest | QUANTITY 6 cups, torn 1 cup, chopped 1 cup, tinned 1 1 stalk, chopped 1/4 cup, crumbled 1/4 tsp |
Wash in cold water and tear the lettuce leaves.
Wash and chop spring onion and radish.
Zest the orange, peel it, remove the orange slices and de-skin them.
Toss all the salad ingredients together, garnish with crumbled feta cheese and some orange zest.
Serve chilled with Orange Oregano Dressing
