During my cabin crew days, I would operate a lot of flights to London Heathrow, and our hotel was located very close to the airport, quite a distance away from the city.
The best part about this hotel was the breakfast buffet. I have travelled a lot and stayed in a lot of different hotels, but I have never enjoyed breakfast as much as I did in the London hotel. Absolutely divine! Especially the hash brown potatoes. Amazingly soft on the inside, a nice crunch on the outside.
After trying my hand at a few recipes and variations, I finally found the recipe that is as close to the hash browns as the ones I used to feast on in London.

INGREDIENTS Potatoes Spring Onion Thyme Capsicum Refined Flour Egg Salt Pepper Oil | QUANTITY 2 cups, grated 1 stalk 1 tsp 1/2 cup, chopped 2 - 3 tbsp 1 to taste to taste 2 - 3tbsp |
RECIPE
Peel and grate the potatoes. Place the grated potatoes in cold water so that they don't turn black.
Just before adding all the other ingredients to the potatoes, place them in a kitchen napkin and squeeze all the water out.
Add chopped spring onions and pimentos to the grated potatoes.
Whisk an egg and set aside.
Sprinkle the flour, salt and pepper on the potatoes, pour the whisked egg and mix well.
Heat a pan, make round 1 cm thick cakes / patties of the potatoes and grill them on both sides using little oil, till they become golden brown.
Tastes best with ketchup and mayo!
