Makes 12 muffins
Butter or Margarine
1/2 cup, canned or fresh
1/4 cup, melted
Preheat the oven to 400 degree F or 180 degrees C.
Grease 12 medium sized muffin cups.
Whisk together milk, egg, melted butter, sugar and the pumpkin purée, and set aside. Make sure the sugar is well dissolved.
Sift together maida, baking powder, cinnamon powder, nutmeg powder and salt.
Fold* the dry ingredients into the egg-milk mixture.
Fill muffin cups 2/3 full. Sprinkle ¼ t sugar over batter in each cup. Bake for 18 to 20 minutes.
** You do NOT want to dump the flour in all at once and mix it roughly or haphazardly, this would make the muffins tough or chewy.
