Another of my cabin crew days' inventions!
As we became seniors in the airline, our schedules were absolutely crazy. Literally living out of a suitcase! We would never get any time to cook a complete meal, eat it in peace, do the dishes and go to work. Who could do all that when you hardly had 10 hours between two flights to catch up on your rest, do your laundry and prepare for you next flight.
This came in handy as it is a very quick recipe and very filling too. One of my all time favourites.

INGREDIENTS Macaroni Eggs Oil Onion Tomato Green Chilli Turmeric Powder Red Chilli Powder Salt Pepper | QUANTITY 1.5 cups 4 2 tbsp 1, medium, chopped 1, medium, chopped 1, slit in the center 1/2 tsp 1/2 tsp to taste to taste |
RECIPE
Boil the macaroni with salt and oil till its 'al dente' (almost cooked). Strain and set aside.
Heat oil in a casserole, add cumin seeds and green chilly. Cook for 1-2 minutes.
Add chopped onion, cook till it becomes translucent. Add the turmeric powder and red chilly powder, stir well and add tomatoes. Cook for 2-3 minutes.
Add the eggs, salt and pepper to this. Stir continuously till the eggs are half cooked.
Add the boiled macaroni to this, and keep stirring till the eggs are well cooked.
Tastes best with ketchup.
