Chocolates are Mitul's weakness. This one was of the first things I had baked for him. And ever since, I have been getting requests of baking various chocolate based recipes every week!

INGREDIENTS Refined Flour Sugar Brown Sugar Baking Powder Baking Soda Salt Chocolate Chips Bananas Butter Eggs Vanilla Essence | QUANTITY 225 gms 100 gms 55 gms 1 tsp 1/2 tsp 1/4 tsp 1/2 cup, white or brown 3, large, ripe 115 gms 2 1 tsp |
RECIPE
Preheat the oven at 180 degrees Centigrade.
Sift together the flour, baking powder, baking soda and salt.
Add Sugar and chocolate chips and mix well. Set aside.
In a hand mixie combine mashed bananas, melted butter, eggs and vanilla essence.
Fold* in the flour slowly. Do not over mix.
Bake for 20 - 25 minutes.
MY NOTES
* To "fold in" an ingredient means you should gently and gradually add it in, a little at a time, using a spatula (the rubber scraper thing) to make horizontal sweeping motions, or mix it turning the spatula in the ''figure of 8''.
** You do NOT want to dump the flour in all at once and mix it roughly or haphazardly, as this would make the muffins tough or chewy.
