ABSOLUTELY gorgeous blend of flavours. Sweet caramelized bananas and brown sugar give this cake its unique flavour.
It is a very simple recipe and a quick fix too. Tastes stunning with a big scoop of vanilla and a slice of warm banana bread.
Its not just a must-try, but I insist you bake it whenever you plan to taking up your next kitchen project.
15 - 20 Minutes
45 - 55 Minutes
1 Hour 15 Minutes
1 Pound Loaf
Light Brown Sugar
Whole Wheat Flour
1 cup / 240 ml, mashed, over-ripe
1/2 cup / 120 ml
1/4 cup / 60 ml
3/4 cup / 165 gms
1 large / 2 small, well beaten
1 cup / 130 gms
1/2 cup / 65 gms
Preheat the oven at 180 deg C.
In a large bowl, whisk together the bananas, curd and baking SODA. Set aside.
In another bowl, whisk together the eggs, sugar, oil and vanilla essence.
Mix the flours, salt, cinnamon powder and the baking POWDER.
Now you can combine the banana mixture and the egg mixture together, and whisk it for a minute.
Pour this mixture in a large bowl. Slowly add the flour mixture to the banana-egg mixture, 1-2 tablespoons at a time. Blend this together with a spatula, turning the spatula in the figure of 8.
DO NOT over mix the dough, as this would make the bread thick and chewy. Do not add all the flour together and then mix it, as this would make lumps in the batter.
Bake for 45-55 minutes.
Cool on a wire rack.
