A delicious accompaniment which has gorgeous caramelized jaggery and date flavours with a slight hint of tangy tamarind.
There are a lot of varieties of this recipe where, in some the ingredients are just mixed together, but this recipe is how my mom would make it, and it definitely tasted much much better.
Boiling all the ingredients together, definitely gave it a more prominent, stronger flavour.

INGREDIENTS Date Paste 300 gms Jaggery 4 tbsp Tamarind Paste 2 tsp Cumin Powder Salt 500 ml Water | QUANTITY 500 gms 300 gms 4 tbsp 2 tsp to taste 500 ml |
RECIPE
Place the date paste in a casserole and pour the hot water on it, cover and set aside for 10 - 15 minutes.
Pour it into a blender and make a fine paste.
Pour the paste back into the casserole, add all the remaining ingredients, and boil for 15 - 20 minutes, till the jaggery has mixed well.
Cool and refrigerate.
Tastes best with Bhel, Chaat, Ragda Patties.
Boiling all the ingredients together, gives it a whole different taste. The boiled/cooked jaggery gives the chutney a nice caramelized taste.
