Makes a great salad for a lunch box filler too and is very simple and quick to make.
A lot of variations to this salad can be made by adding peanuts, beans, vegetables, herbs, lemon juice, and whatever else you like in your meal.

QUANTITY 100 gms 200 ml 2 large 1 stalk 1/2 1 cup, torn 3 - 4 cubes / any soft cheese 1 tsp, roasted |
RECIPE
Soak the couscous in hot stock, cover and set aside for 10 minutes.
Wash all the vegetables. Tear the lettuce into medium pieces, chop spring onions, cucumber and red pepper.
Toss the vegetables and the couscous together.
Garnish with crumbled Feta cheese / any other soft cheese, and roasted pine nuts.
Tastes best with Garlic Mint Vinaigrette.
